This sounds blasphemous but I may have found noodles better than Xians Famous Foods and they come from a tiny, unassuming stand in Chelsea Market. As the name implies, Very Fresh Noodles makes their noodles right in front of you and they have the perfect consistency: extra chewy, just the right thickness, but still plenty of wiggles to catch more of the soup/chili sauce. I opted for the dry lamb noodles but definitely plan on switching to the soupier version come winter. The onions and cilantro on top round out the powerfully flavorful dish and I couldn't have asked for anything to be changed. Come here, order the noodles, consider wearing a napkin bib because chili oil stains from slurping are inevitable.
