1. Throw it in every smoothie
Kale has a pretty mild flavor and if you want to make sure your smoothie comes out smooth, remove some of the big ribs (those hard parts in the middle of the leafy bits). It’s a great way to sneak in more greens into your diet.
2. Make kale chips
Remove the ribs and massage a little olive oil on each to soften then season (little salt can go a long way and you can always salt more later). Your kale must be completely dry before baking and you must let them fully dry out and cool down before putting them in a bag or else they will get soggy.
3. Add it to mac n cheese
I was first introduced to this vegan recipe from one of my friends and it has become a stand-by when I have too much kale. Obviously nutritional yeast can be replaced by normal cheese (I personally like a blend of cheddar and gruyere). See this recipe for vegan mac n cheese.
4. Make a slaw
If you remove the ribs and slice this very thin and add it to thin strips of red cabbage, strips of carrots, and broccoli stems then a little white vinegar, ranch or any cream based dressing, and let it sit for an hour to let the acid break it down. It’s a good addition to sandwiches, tacos, and salads.
5. Mix it with other greens
Add it to newer spinach, arugula, or ice berg to sneak it into your salads. Just make sure to remove the ribs.
