Although the hand-pulled noodles and lamb burger good, the lamb dumplings are my favorite by a long shot. The lamb is marinated in northern Chinese spices like cumin and then folded into dumpling skins that are super thick and chewy. They are steamed and then should be dowsed in black vinegar, soy sauce, and chili. Pro-tip: bit into half of the dumpling then use it as a scoop to get more of the black vinegar/soy sauce/chili in it because who doesn’t love more flavor (aka more sodium)
