East Village

Tsukemen (a dry version of ramen where you dip the noodles into a concentrated version of the broth) is not a common offering at most ramen shops and the version at Minca is particularly flavorful and filling. It’s a bit on the salty side but if you’re looking for a hearty bowl on a cold night and have pretty good chopstick skills, this is perfect.

What I ordered: Tsukemen

Average price per bowl: $10.50-$16

Inside scoop: They blow torch the chashu before serving.
