Hell's Kitchen or Midtown East
I may be a little biased but even though Totto may have the best noodles in the game right now in Manhattan (which I don’t say lightly), in every broth I’ve had there I’ve always been missing the smoky, fatty flavor of a tonkotsu. A lot of people swear by Totto’s chicken based broth but for me, if you have a choice wouldn’t you always choose pork?
